Roasted Tomato Caprese Salad

A little riff on a classic Italian salad, this roasted tomato Caprese salad is a perfect addition to any special occasion.

Roasted Tomato Caprese Salad

Serving Size:


  • 2 punnets cherry tomatoes or use a mix of cherry and cocktail varieties
  • 2 drops garlic extract or 1 clove crushed garlic
  • 1/4 cup extra-virgin olive oil
  • Flaky sea salt
  • 1 ball burrata
  • Fresh basil
  • Country-style bread, brushed with oil, toasted in oven (for serving)


  1. Preheat your oven to 175°C.
  2. Toss tomatoes, garlic, and oil on a rimmed baking sheet to coat and season lightly with sea salt. Spread out and roast until tomatoes are bursting and lightly browned, approximately 20 minutes. 
  3. Arrange 3/4 tomatoes on a platter and spoon warm tomato mixture with juices over.
  4. Gently use your fingers to split the burrata over the top of the tomatoes; sprinkle with sea salt, drizzle with extra olive oil and top with remaining tomatoes.
  5. Scatter with fresh basil leaves.
