Caramelised Onion and Tomato Bake

Our gorgeous side dish, a caramelised onion and tomato bake, is perfect with a steak or simply pan fried fish or roasted chicken. Or eat it on it’s own!

Caramelised Onion and Tomato Bake

A white ceramic oven proof dish filled with all the ingredients for the caramelised onion and tomato bake and ready to go into the oven.

  • 2 tbsp olive oil
  • 2 onions , thinly sliced
  • 3 garlic cloves , thinly sliced
  • 500g cherry tomatoes
  • A handful of fresh oregano, washed and dried
  • 2 tsp white sugar
  • 50 fresh breadcrumbs
  • 2 tbsp olive oil
  • Heat the olive oil in a heavy based frypan and gently soften the onions and garlic for 20-30 mins until really soft and sticky but not too browned. 
  • Heat oven to 180C/160C fan/gas 4.
  • Put the cooked onions, cherry tomatoes, herbs, sugar and breadcrumbs in a baking dish, season well and toss together.
  • Drizzle with the remaining oil, add a few more herb sprigs and bake for 1 hr.


If you wish to reheat, use the oven or grill rather than the microwave, so that the breadcrumbs are crispy.
